Creamy broccoli soup using a vitamix!


Recently Reilly and I celebrated our four year wedding anniversary. With that we decided that this year we will not do separate gifts for each other, but instead to get a nice blender that we have been eying for months now.


YAY!


So we got a Vitamix!. It is extremely pricey, but it is going to last us forever (or so we hoped) and we are very happy so far. To use our bran new appliance we have been making lots of soup, some smoothies, and juice!

A couple days ago (after a failed attempt to make a tasty creamy broccoli soup), I made this recipe right -->here<--


I love the bright color on the steamed broccoli, so pretty!

Ingredients:

-1/4 cup of cream cheese
-1-3/4 cups of milk
-1 cup of shredded sharp cheddar cheese
-4 and 1/2 cups of steamed broccoli
-2 teaspoons of diced onion
-1 chicken bullion cube 
-4 slices of turkey bacon

I imagine that you can make this exact soup with a regular blender, and or a hand wand. It will probably just take a bit longer.

Pretty much the recipe says to put all the ingredients in the Vitamix, with an exception of 1 and 1/2 cup of broccoli. Blend for 5 minutes. Then add 1 cup of broccoli and blend for 5 seconds or so, until the broccoli it's slily chopped, but not completely pureed.

Then I used the extra broccoli for adding as decoration, and they serve as bigger bites of broccoli, YUM.

Delicious uncured turkey bacon from Trader Joes, this one is the pepper kind. LOVE it!
 This soup it's pretty tasty. The recipe should make 4 servings of 184 cal each.
